Ingredients
Makes 20 meatballs
500g of boneless chicken thighs (leave any fat on)
1/2 cup of breadcrumbs
1 egg
1 teaspoon of ground paprika
2 teaspoons of garlic powder
1 teaspoon of dried basil
1 teaspoon of dried dill
Pinch of salt (optional)
Method
Preheat your oven to 180C fan force.
Add all your ingredients into a food processor and blitz until you see a minced meat consistency, the mixture will look smooth and all ingredients are blended.
Add a sheet of baking paper to a tray.
Roll spoonfuls of the mixture into balls and place on the baking paper, repeat until all the mixture is used.
Bake in the oven for 20 minutes until cooked through and lightly browned.
These can be served hot or cold and can be kept in the fridge for 3 days or in the freezer for 3 months.
